Serve warm or cold.
Ingredients:
- 2 (2.6 oz.) or 1 (5 oz.) pouch StarKist® Premium White Chicken
- 2 oz. light cream cheese (Neufchatel), softened
- 2 Tbsp. plain fat-free Greek yogurt
- 2 Tbsp. enchilada sauce
- 1 ½ tsp. chopped chipotle pepper
- 1 tsp. lime juice
- ½ tsp. lime zest
- 2 Tbsp. diced red onion
- ¼ cup diced tomatoes
- ¼ cup black beans, drained and rinsed
- 1 Tbsp. shredded Mexican-style cheese
- Cilantro for garnish
Directions:
- Place cream cheese, yogurt, enchilada sauce, chipotle pepper, lime juice and zest in a medium bowl. Mix until well combined.
- Gently stir in red onion, tomatoes, black beans and chicken.
- If baking, place in a preheated, 350°F. oven and bake for 10 minutes.
- Garnish with chopped cilantro and cheese.
- Serve with tortilla chips or cut-up vegetables.
- Serve warm or cold.
