Serve warm or cold.
Ingredients:
- 2 (5 oz.) pouches StarKist® Premium White Chicken
- 4 oz. light cream cheese (Neufchatel), softened
- ¼ cup plain fat-free Greek yogurt
- ¼ cup enchilada sauce
- 1 Tbsp. chopped chipotle pepper
- 2 tsp. lime juice
- 1 tsp. lime zest
- ¼ cup diced red onion
- ½ cup diced tomatoes
- ½ cup black beans, drained and rinsed
- 2 Tbsp. shredded Mexican-style cheese
- Cilantro for garnish
Directions:
- Place cream cheese, yogurt, enchilada sauce, chipotle pepper, lime juice and lime zest in a medium bowl. Mix until well combined.
- Gently stir in red onion, tomatoes, black beans and chicken.
- If baking, place in a preheated 350°F oven and bake for 10 minutes.
- Garnish with chopped cilantro and cheese.
- Serve with tortilla chips or cut-up vegetables.
- Serve warm or cold.
