Recipe Yield: 8 sandwiches
Assemble all ingredients on a large board and allow everyone to make their own sandwiches from the various ingredients.
- 2, (4.5 oz.) cans StarKist E.V.O.O.® Albacore Tuna in Extra Virgin Olive Oil
- 1 loaf whole grain bread
- ¼ cup sliced cucumber
- ¼ cup sliced red cabbage
- ¼ cup arugula
- ¼ cup roasted red peppers
- 12 grape tomatoes, sliced thinly (or 2 small Campari tomatoes, sliced thinly)
- 1 small bunch of watercress or baby spinach
- 2 radishes, sliced thinly
- ⅓ cup tzatziki dressing
- 4 oz. Boursin cheese
- ½ cup hummus
- 1 can herbed chickpeas
- Tzatziki Dressing:
- ¼ cup plain Greek yogurt
- 3 tbsp. finely diced cucumber
- 1 tbsp. lemon juice
- ¼ tsp. lemon zest
- ½ tsp dried oregano
- ⅛ tsp. black pepper
- For the Tzatziki Dressing:
- Mix the yogurt, cucumber, lemon juice, lemon zest, oregano and pepper in a small bowl until thoroughly combined.
- For the Sandwiches:
- Place the bread slices on a large board.
- Cover each slice of bread with 1 – 2 tablespoons of hummus, boursin cheese, or cream cheese.
- Top each with a mix of vegetables.
- Suggested combinations:
- Hummus with sliced cucumbers, and tomatoes and a drizzle of the tzatziki dressing
- Boursin cheese with sliced radishes and watercress
- Cream cheese with sliced red cabbage and arugula
