Ingredients:
  • 1, (4.5 oz.) Can StarKist E.V.O.O.® Yellowfin Tuna in Extra Virgin Olive Oil (undrained)
  • 6 oz. block of feta cheese, room temperature
  • 1 cup reduced-fat (2%) plain Greek yogurt
  • ¾ cup roasted red pepper strips, divided
  • 10 green olives, sliced
  • ¼ cup diced cucumber
  • 1 tsp. chopped fresh dill
  • Toasted sour dough bread, crackers or vegetables for dipping
Directions:
  • Place feta cheese, yogurt and ½ cup of roasted red peppers in a food processor or blender. Blend until smooth and creamy.
  • Place whipped feta in a shallow bowl.
  • Top with olives, cucumber and the remaining red peppers.
  • Add the chunked tuna on top and sprinkle with fresh dill and drizzle with any remaining olive oil from the tuna can.
  • Serve with crusty bread, crackers and/or vegetables.
