Ingredients:
- 1, (4.5 oz.) Can StarKist E.V.O.O.® Yellowfin Tuna in EVOO with Basil Pesto
- 2 slices whole grain bread
- ¼ cup diced artichoke hearts
- 2 Tbsp. diced sundried tomatoes packed in olive oil
- 1 Tbsp. mayonnaise
- 4 thin tomato slices
- 2 Tbsp. shredded Parmesan cheese
Directions:
- Preheat the broiler or toaster oven. Place bread on a sheet pan. Toast the bread on both sides.
- In a medium bowl, gently mix together the tuna, artichoke hearts, tomatoes and mayonnaise, being careful not to break up the tuna.
- Place ~ ½ cup of the tuna mixture on each slice of bread and spread it to the edges.
- Top the tuna mixture with 2 tomato slices. Repeat on the second sandwich.
- Sprinkle each with 1 Tbsp. of Parmesan cheese. Place under the broiler just until the cheese melts and is bubbling slightly.
