Inspired from the Tik Tok “Baked Feta” videos as sauce for pasta for a hearty dinner or you can use it as an appetizer. Serve with a tossed salad on the side.

Ingredients:
  • 1, (4.5 oz.) Can StarKist E.V.O.O.® Yellowfin Tuna in EVOO with Basil Pesto, undrained
  • 3 Tbsp. olive oil, divided
  • 2 pints grape tomatoes, washed
  • 8 oz. feta cheese block
  • 2 garlic cloves, sliced
  • 1 medium shallot, sliced
  • ¼ cup sliced fresh basil
  • Salt and pepper
Directions:
  • Preheat the oven to 400°F.
  • Place 2 Tbsp. olive oil in a large baking pan or casserole dish.
  • Add the tomatoes, garlic, and shallots and toss well to coat with the olive oil.
  • Nestle the block of feta cheese in the center of the tomatoes, pushing them to the sides so the cheese rests in the bottom of the pan with the tomatoes surrounding it.
  • Sprinkle with salt and pepper and drizzle with the remaining 1 tbsp of olive oil.
  • Bake in preheated oven for 40 – 45 minutes, until the tomatoes are bubbling and the cheese has started to brown on the top.
  • Remove from the oven and top with the large pieces of tuna and remaining olive oil from the can. Sprinkle with fresh basil.
  • Serve with crusty bread or pita chips for a delicious appetizer.
  • Alternate Serving Suggestion: After you remove from the oven, mix together to break up the melted feta cheese and pour it over freshly cooked pasta.
