Ingredients:
  • 2, (4.5 oz.) Cans StarKist E.V.O.O.® Yellowfin Tuna in EVOO with Basil Pesto (chunked but not drained)
  • 1 lb. Campanelle pasta
  • ½ cup sliced sundried tomatoes packed in olive oil
  • ½ cup grated parmesan cheese
  • 1 ½ tsp. lemon zest (zest from 1 lemon)
  • ¼ cup microgreens
Directions:
  • Boil pasta according to package directions to the al dente stage.
  • Drain the pasta and place in a large bowl.
  • Mix in the sliced tomatoes, cheese and lemon zest until well combined.
  • Gently stir in the tuna and extra virgin olive oil from both cans.
  • Garnish with microgreens and serve.
