Ingredients:
- 2, (4.5 oz.) Cans StarKist E.V.O.O.® Yellowfin Tuna in EVOO with Basil Pesto (chunked but not drained)
- 1 lb. Campanelle pasta
- ½ cup sliced sundried tomatoes packed in olive oil
- ½ cup grated parmesan cheese
- 1 ½ tsp. lemon zest (zest from 1 lemon)
- ¼ cup microgreens
Directions:
- Boil pasta according to package directions to the al dente stage.
- Drain the pasta and place in a large bowl.
- Mix in the sliced tomatoes, cheese and lemon zest until well combined.
- Gently stir in the tuna and extra virgin olive oil from both cans.
- Garnish with microgreens and serve.
