- 1, (4.5 oz.) Can StarKist E.V.O.O.® Yellowfin Tuna in Extra Virgin Olive Oil (undrained)
- 6 oz. block of feta cheese, room temperature
- 1 cup reduced-fat (2%) plain Greek yogurt
- ¾ cup roasted red pepper strips, divided
- 10 green olives, sliced
- ¼ cup diced cucumber
- 1 tsp. chopped fresh dill
- Toasted sour dough bread, crackers or vegetables for dipping
- Place feta cheese, yogurt and ½ cup of roasted red peppers in a food processor or blender. Blend until smooth and creamy.
- Place whipped feta in a shallow bowl.
- Top with olives, cucumber and the remaining red peppers.
- Add the chunked tuna on top and sprinkle with fresh dill and drizzle with any remaining olive oil from the tuna can.
- Serve with crusty bread, crackers and/or vegetables.
