Ingredients:
- 1 can (12 oz.) StarKist® Chunk Light Tuna in Water, drained
- ½ cup black beans, rinsed and drained
- ½ cup corn
- ¼ cup diced orange pepper
- ¼ cup diced red pepper
- 12 romaine lettuce leaves
- Zesty Clamato® Dressing
- 3 Tbsp. canola oil
- 2 Tbsp. Clamato® Limon juice
- 1 tsp. tomato paste
- 1 Tbsp. white wine vinegar
- 1 tsp. lime zest
- ¼ tsp. sugar
- 1 clove garlic, minced
- 1 tsp. cumin
- 1 tsp. chili powder
- 2 tsp. diced green chilies (canned)
Directions:
- Combine tuna, beans, corn, and peppers in a medium bowl. Toss with ½ the dressing. Fill each leaf with tuna mixture and drizzle with leftover dressing.
- To make the dressing: Place all components in a small bowl food processor and blenderize until thick and creamy.
