Ingredients:
- 1, (6 oz.) pouch StarKist Tuna Creations® Sweet and Spicy
- 2 tsp. vegetable oil, divided
- ¼ cup sliced red onion
- ¼ cup sliced red bell pepper
- ¼ cup sliced yellow pepper
- 1 cup sliced baby bella mushrooms
- ½ cup edamame shelled beans
- 2 cups baby Bok choy, trimmed
- 1, (5 oz.) package Japanese curly soba noodles
- ¼ cup chopped peanuts
Directions:
- In a large skillet heat 1 tsp. of vegetable oil over medium heat. Add the onion and bell peppers and sauté for 3 minutes, until just softened. Remove from the pan to a plate.
- Add the remaining oil and heat over medium high heat. Add the mushrooms and cook until browned on both sides, about 4 minutes. Reduce the heat to medium and add the onions and peppers back to the pan.
- Stir in the edamame beans and the Bok choy and cook until the Bok choy is wilted, and the beans are hot. Stir in the tuna to combine.
- In a large saucepan, heat water to boiling. Add the curly soba noodles and cook according to the package directions, about 3 minutes. Drain.
- Place ½ the noodles on a plate. Top with the vegetable and tuna mixture. Top with ½ the peanuts. Place the remaining noodles and vegetable and tuna mixture on a second plate.
