Ingredients:
- 1, (6 oz.) pouch StarKist Tuna Creations® Lemon Pepper
- ⅓ lb. bowtie pasta (⅓ of a box)
- 1 cup broccoli flowerets
- 2 tsp. extra virgin olive oil
- ½ sweet onion, sliced (about 1 cup)
- ½ red bell pepper cut into 1-inch slices (about 1 cup)
- 2 cups sliced white button or baby bella mushrooms
- 2 cups baby spinach
- ¼ cup crumbled feta cheese
Directions:
- Boil pasta according to package directions. During the last 3 minutes of cooking, add the broccoli flowerets. Drain and set aside.
- While the pasta is cooking, heat the extra virgin olive oil over medium heat in a large skillet. Add the onions and red peppers and sauté for about 3 minutes, until just softened. Add the mushrooms and cook until browned on both sides, about 5 more minutes.
- Turn off the heat and stir in the spinach leaves to wilt.
- Place the pasta and broccoli in a large bowl. Gently mix in the sauteed vegetables and stir to combine.
- Divide between 2 plates and sprinkle with feta cheese.
