Recipe Yield: 4 servings
Ingredients:
- 1 pouch (6 oz.) or 2 pouches (2.6 oz.) StarKist Tuna Creations® Lemon Pepper
- 1 cup (½ lb.) dry orzo
- 2 cups water or broth
- ½ cup feta cheese, divided
- ¼ finely diced red onion
- ¼ cup sliced kalamata olives (about 12)
- ½ cup diced roasted red pepper
- 4 cups sliced fresh baby spinach
Directions:
- Cook orzo in broth or water for 7-8 minutes, until liquid is absorbed.
- Stir in ¼ cup of the feta cheese while the orzo is hot. Allow to cool.
- Once cooled, stir in red onion, olives, roasted red pepper and remaining feta cheese.
- Toss with spinach and serve.
