Ingredients:
- 1, (4.5 oz.) Can StarKist E.V.O.O.® Yellowfin Tuna with Crushed Red Peppers
- 1 cup plain hummus
- 8 kalamata olives, quartered
- ¼ cup diced tomatoes
- ¼ cup diced cucumber
- 2 Tbsp. diced red onion
- 1 scallion, sliced (green parts only)
- 1 Tbsp. crumbled feta cheese
- ¼ cup dried chickpeas
- 2 large pita breads (8-inch), cut into quarters
- ¼ cup crumbled kale chips (optional)
Directions:
- Spread the hummus on a medium wood board or large plate.
- Sprinkle the top with the olives, tomatoes, cucumber, red onion, and scallions.
- Break apart the tuna and place it in large pieces on the hummus and vegetables.
- Sprinkle the feta cheese, chickpeas, and crumbled kale chips over top.
- Drizzle with any remaining olive oil and peppers from the tuna can.
