Ingredients:
- 2 pouches (2.6 oz.) StarKist Tuna Creations® Lemon Pepper
- 1 tsp. olive oil
- 1 cup shaved Brussels Sprouts
- 1 cup baby spinach and kale blend
- 1 cup cooked farro
- 1 Tbsp. diced red onion
- 2 Tbsp. crumbled feta cheese
- 2 Tbsp. chopped pistachios
Directions:
- Heat oil in a medium sauté pan until sizzling. Add Brussels sprouts and cook until just turning bright green and starting to brown. Add spinach and kale and cook for ~ 1 minute, until just wilted.
- Divide farro between 2 medium bowls. Toss ½ the Brussels sprouts and spinach mix in each bowl. Add ½ the onion and feta and 1 pouch of tuna to each bowl and mix gently.
- Top with chopped pistachios.
