Rice bowls are an easy way to use leftover veggies! Mix it up and use what you have on hand.
- 1 Pouch (2.6 oz.) StarKist Tuna Creations® Bold Thai Chili
- 3⁄4 cup cooked brown rice (or cooked cauliflower rice)
- 1 cup cooked diced sweet potatoes
- 1⁄2 cup steamed sliced Bok choy
- 1⁄4 cup chopped bamboo shoots
- 1 Tbsp. chopped peanuts
- Place rice in the bottom of a medium bowl. Top with tuna, sweet potatoes, Bok choy and bamboo shoots. Garnish with chopped peanuts.
- Stir to enjoy!
