Recipe Yield: 5 (2 wedges each)
- 1 pouch (2.6 oz.) StarKist Tuna Creations® Lemon Pepper
- 1 English cucumber, cut into 2-inch pieces, halved and with the center scooped out
- ⅔ cup plain hummus
- 2 Tbsp. diced red pepper
- 2 Tbsp. crumbled reduced-fat feta cheese
- Place the cucumber wedges on a platter. Spread 2 tsp. of hummus in the center of each wedge.
- Top the hummus with ~ 1–2 tsp. of tuna.
- Sprinkle the diced red pepper and feta cheese over the top.
