Ingredients:
  • 1, (6 oz.) pouch StarKist Tuna Creations® Lemon Pepper
  • ⅓ lb. bowtie pasta (⅓ of a box)
  • 1 cup broccoli flowerets
  • 2 tsp. extra virgin olive oil
  • ½ sweet onion, sliced (about 1 cup)
  • ½ red bell pepper cut into 1-inch slices (about 1 cup)
  • 2 cups sliced white button or baby bella mushrooms
  • 2 cups baby spinach
  • ¼ cup crumbled feta cheese
Directions:
  • Boil pasta according to package directions. During the last 3 minutes of cooking, add the broccoli flowerets. Drain and set aside.
  • While the pasta is cooking, heat the extra virgin olive oil over medium heat in a large skillet. Add the onions and red peppers and sauté for about 3 minutes, until just softened. Add the mushrooms and cook until browned on both sides, about 5 more minutes.
  • Turn off the heat and stir in the spinach leaves to wilt.
  • Place the pasta and broccoli in a large bowl. Gently mix in the sauteed vegetables and stir to combine.
  • Divide between 2 plates and sprinkle with feta cheese.
