Ingredients:
- 1, (6 oz.) pouch StarKist Tuna Creations® Sweet and Spicy
- 2 tsp. vegetable oil
- ½ cup sliced red bell pepper
- ½ cup sliced yellow pepper
- ¼ cup sliced red onions
- 1 small zucchini, sliced in half and cut in 1-inch pieces
- 1 cup snow peas, stimmed and sliced
- 1 can baby corn pieces, drained
- 1 cup chopped baby Bok choy or baby spinach
- 1 ½ cups brown rice
- ¼ cup chopped cashews
Directions:
- In a large skillet heat 1 tsp. of vegetable oil over medium heat. Add the bell peppers and red onion and sauté for 2 minutes, until just starting to soften.
- Add the zucchini and snow peas and sauté an additional 2-3 minutes.
- Stir in the corn and the Bok choy and cook until the Bok choy is wilted, and the corn is hot. Stir in the tuna to combine.
- Divide the rice between 2 plates. Top each with the vegetable and tuna mixture. Top with ½ the cashews.
