Ingredients

  • 1 package angel hair spaghetti or other type pasta
  • 1-2 tbsp olive oil
  • 1 small red onion, diced
  • 1pint button mushrooms, sliced
  • 2 garlic cloves, minced
  • 1 tbsp red pepper flakes
  • 1 jar artichoke-tomato pesto (substitute one can quartered artichoke hearts plus prepared basil pesto of needed)
  • 1-2 fresh Roma tomato if desired
  • 1 pouch (2.6 oz.) StarKist Tuna in Olive Oil
  • Sprinkle of Shaved Romano/parmesan if desired

Directions

  1. Boil water and cook pasta according to Package. Strain and set aside.
  2. While cooking pasta: Heat olive oil in a sauce pan over medium heat.  Add diced red onion. After semi- translucent, add mushrooms until all liquid has evaporated from mushrooms Add minced garlic, toast 1-2 minutes or until fragrant, stirring frequently
  3. Drain tuna, add to sauce pan. Stir for 1-2 minutes letting tuna absorb the flavors
  4. Add jar of artichoke- tomato/pesto Toss with pasta Serve with oven-fresh bread... Voila!
